Bruschetta w/ Avocado Dip & Runny Egg

I'm an avocado toast person. As hipster as that might be! I really am a fan. I also spent a little while in Hawaii where I pretty much lived on side of the road avocados, a jar of peanut butter, and sea salt. So, avocado dip with peanuts is rather nostalgic for me. I'm also just incredibly fond of making avocado dip with various types of nuts. It's almost like a cross between hummus and guacamole, but works better with a wider variety of dishes. That may age me because avocado toast is one of those quintessential hipster foods. But it is one of my favorite things to make. It's also just a really great way to start the day. The avocado dip is packed full of peanuts, Greek yogurt, and olive oil. Add in homemade bread and runny egg? There truly is nothing better before a long day!

Variations of Avocado Bruschetta

I don't always think about making bruschetta. It's one of those fancifull appetizers at Italian restaurants that I honestly don't think that I've ever ordered. Come to think of it, I don't think that I've ever actually had bruschetta from a restaurant. Although I do make them for work. So, it does cross my mind as something in the culinary lexicon. I've also been making quite a bit of bread over the last couple of years. Which means that I'm constantly trying to come up with fun and new ways to utilize toast. Bruschetta is one of the simplest ways to make what is essentially toast, but looks far more put together than simply avocados on bread. A lot of the time I'll make them in the morning for breakfast and toss on an egg. If you're feeling extra fancy today, a poached egg with salmon and freshly chopped dill is quite impressive.

This Avocado Bruschetta consists of a runny egg on top of homemade bread, with an avocado dip medley of Greek yogurt, peanuts, olive oil, garlic, and limes. It's roughly a cross between hummus and guacamole, but goes with a wider variety of dishes and is absolutely delicious on top of toast. It elevates your avocado toast to bruschetta status and makes a simple meal feel oh-so-fancy.

Ingredients
  

No-Knead Dutch Oven Bread

  • 472 ml. warm mater ~100°F (2 c.)
  • 2 ¼ instant yeast (1 package)
  • 2 honey (or granulated sugar, maple syrup, or brown sugar)
  • 570 all-purpose flour (4 ¾ c.)
  • 2 salt
  • oil to grease bowl

Avocado Dip

  • 6 avocados ripe
  • 6 cloves garlic (optional)
  • 6 limes juiced
  • 1 ½ c. Greek Yogurt
  • 2 c. peanuts unsalted, unroasted
  • 1/4 c. olive oil
  • dash salt
  • dash pepper

Bruschetta

  • 1 slice bread toasted
  • 1 eegg fried
  • dollop high heat oil
  • spread avocado dip
  • dash salt
  • dash pepper

Prepare Ingredients

  • Bake No-knead Dutch Oven Bread. You can easily buy a loaf of bread. If you want to make it, though, this is a quick and easy recipe. The entire process takes about 3 hours, with no need to knead the bread or plan for days long proofs!
  • I also topped this burrito with Potluck Avocado Dip w/ Greek Yogurt & Peanuts. This is entirely optional. You can easily substitute sour cream or omit it entirely. Although this avocado dip is my new favorite thing and I highly recommend giving it a try. It's kind of a mix between hummus and guacamole. And is absolutely delicious!

Toast Bread

  • I toasted my bread in an air fryer for about 2-3 minutes. But you can easily do this in a toaster, toaster oven, or in a skillet on the stove. Just adjust the cook time to your particular method.
  • Spread avocado dip across the toast and set aside.

Fry Egg

  • Meanwhile, preheat a pan on medium-high heat.
    I use a pretty well seasoned cast iron pan to cook eggs, so I don't add any more than a spritz of oil. You may need upwards of a teaspoon for other types of pans, though. Use just enough so that your eggs don't stick!
  • When the pan is thoroughly preheated, crack an egg into the center.
    It should be hot enough that the egg sizzles, but doesn't deep fry or brown immediately.
  • Let cook until golden brown on the bottom and you can flip the egg with ease. The whites should be fairly set on both sides, but not completely cooked.
    You want to cook this relatively quickly so that the egg yolk doesn't set, though. It should take about a minute or two. Turn the heat up if the egg whites don't cook quickly enough or down if the egg yolk starts to cook. Also immediately flip if this happens!
  • Flip and turn off the stove. Cook for another 30 seconds, or until the egg white is completely cooked. It should already be mostly set and this should take no time at all!
  • Add to the bruschetta and serve immediately. Before the egg sets!
