Tzatziki w/ Skyr, Shallots, & Lemons
I ordinarily have Greek yogurt on hand. I use it as a substitute for sour cream, as an alternative to milk or cream in pasta sauce, and generally just like the flavor of Greek yogurt. So, I ordinarily have a ton of it just lying around! But I'm in the process of moving and am almost entirely out. I was wandering around the grocery store thinking that I wanted to make tzatziki, though. And, unfortunately, I wasn't at the grocery store with the best price on Greek yogurt. I originally thought that I was going to just have to buy it. However, I then found skyr in the yogurt isle! Hence the skyr tzatziki.
Now, I've never had skyr before. I had to briefly pause to figure out that it was actually yogurt. But I've been craving tzatziki and it seemed like a fun time to try it out! I'm currently in the process of moving and the vast majority of my kitchen is in boxes. So, quick and easy recipes that don't require a lot of equipment are my go-to at the moment. I didn't have a particular end recipe in mind for this, but have very much enjoyed dipping delivery pizza and breadsticks in it.

Variations of Skyr Tzatziki
There are plenty of ways to make tzatziki. It's one of those recipes that you can toss together in just a couple of minutes. It's surprisingly delicious for something so simple to make. I often add it to falafel or use it as a sour cream substitute in things like nachos and burritos.
Tzatziki w/ Skyr, Shallots, & Lemons
Ingredients
- 1/2 English cucumber (or 1 smaller cucumber), minced or finely grated
- 1/2 shallot minced
- 1 lemon juiced
- 24 oz. skyr (or Greek yogurt)
- 1 tbsp. olive oil
- dash salt
Instructions
- Either finely mince the cucumber or shred it using a fine cheese grater.It can help to peel the skin first, but this is entirely optional.
- Combine all of the ingredients in a small bowl (grated cucumber, lemon juice, Greek yogurt, olive oil, and salt). Stir and serve immediately or chill in the refrigerator.
