Skyr tzatziki is a fun take on a more classic tzatziki with skyr, instead of Greek yogurt, English cucumbers, shallots, lemon juice, and olive oil. You can substitute anything yogurt-like for Greek yogurt. From cow's milk to goat milk, australian yogurt, coconut yogurt, cashew yogurt, kefir, and skyr. Thicker yogurts that are more similar to Greek yogurt are going to have a more typical consistency. Although you can use whatever you want, including making a vegan version, just by swapping out the type of yogurt.
1/2English cucumber(or 1 smaller cucumber), minced or finely grated
1/2shallotminced
1lemonjuiced
24oz.skyr(or Greek yogurt)
1tbsp.olive oil
dashsalt
Instructions
Either finely mince the cucumber or shred it using a fine cheese grater.It can help to peel the skin first, but this is entirely optional.
Combine all of the ingredients in a small bowl (grated cucumber, lemon juice, Greek yogurt, olive oil, and salt). Stir and serve immediately or chill in the refrigerator.
