Salsa w/ Avocado, Cucumber, & Tomatoes
I have been making quite a bit of vermicelli salads lately. Vermicelli is a thin pasta created from brown rice, oftentimes used in stir fry. And, as much as I'm obsessed with vermicelli, which I've been making as kind of a cross between a salad and an un-fried stir fry... Today I have opted to make an actual salad! Which, I guess, with no lettuce or pasta at all? It's really more of a fresh salsa than an actual salad. So, in the spirit of making dishes that only vaguely resemble their intended purpose, I have avocado salsa.
Fresh salsas are incredibly simple to make. All it really calls for is tossing fruit in a bowl with a little bit of acidity. Today, I used apple cider vinegar and limes because I wanted to give it a little Mexican or Mediterranean flair. I tossed in cucumbers, red onions, tomatoes, garlic, serranos, and avocados for good measure. Although you can easily swap in and out your own produce of choice! Especially in terms of the peppers. I tend to like a spicier salsa. With an entire serrano, this is more of a medium salsa with a bit of a kick. But you can easily add more or less to your own personal preference.

What to Make w/ Avocado Salsa
This avocado salsa is incredibly easy to eat as is on the side. However, I've been tossing it into a multitude of recipes. It's the perfect accent to Mediterranean and seafood dishes as well as Latin American-inspired fares.

- Large Bowl
Ingredients
- 1 cucumber diced
- 1/4 red onion diced
- 2 tomatoes diced
- 1 clove garlic minced
- 1 serrano minced
- 1 lime juiced
- 2 tbsp. apple cider vinegar
- dash salt
- dash pepper
- 1 avocado diced
Instructions
- Dice and mince all of the produce.
- Add all of the ingredients to a large bowl and stir to combine.It can help to mix all of the other ingredients well and then gently add in the avocado. This will prevent the soft avocado from disintegrating into the salsa. But it is that easy! Just mix and voila.
