Pasta w/ Sweet Potato & Yellow Bell Pepper

I have a problem with writing down recipes. It's part of the reason that I have a food blog. If I have to post what I did? Then, I have to actually keep track of what I do. This ultimately means that, when I make something great, I can actually replicate it later on! It also acts as kind of a food diary for inspiration. When I don't know what to have for dinner, I'll just peruse things that I already know are in my repertoire. I made this Pepper Fusilli a couple of days ago when I got off of a plane. I made it specifically because pasta is so simple to make. So, there's not really any guessing what I did here.

Although it is amusing to find that I didn't format this page or even open a recipe index. I just opened a new tab, jotted down all of the ingredients all willy nilly. Each one in its own paragraph no less. And wrote myself a disjointed little intro. So, here it is, intro being foreshadowed by my amusement of myself and properly formatted. Although it does go to show how, even in the most delirious of states, if there's a will, there's a way!

I just got back from a trip with some spectacular home cooking. And I need something quick and easy to eat with a fun little flair. I'm almost craving curried lentils. Although I don't have the energy to make a whole stew. So, I'm going the Italian fusion way and making pasta with sweet potato, red onion, ginger, yellow bell pepper, and an assortment of spices.

Variations of Pepper Pasta

A lot of the time cheese is the star of the show when it comes to pasta. And I'm not stranger to that! I love a good macaroni and cheese, alfredo, or fondue-inspired pasta concoction. Although I do enjoy a good vegetable in my pasta dishes from time to time? Sometimes you just need to indulge in the simple things that are absolutely delicious.

Pasta w/ Sweet Potato & Yellow Bell Pepper

This bell pepper pasta consists of yellow bell peppers, sweet potatoes, red onion, garlic, and ginger sautéed together with smoked paprika, cumin, coriander, nutmeg, and a dash of salt and pepper with fusilli. All topped off with a hefty dose of freshly grated parmesan cheese. Although you can easily mix and match your own favorite fruits and vegetables or that you have on hand. Pasta is a great dish to customize and make your own.

Equipment

  • Large Pot
  • Cheese Grater
  • Saucepan
  • Stovetop

Ingredients
  

  • 1/2 lbs. pasta (I used fusilli, although any pasta of choice will do)
  • 1 yellow bell pepper diced
  • 1/2 sweet potato diced
  • 1/4 red onion diced
  • 2 cloves garlic minced
  • 1 tsp. ginger minced
  • dash smoked paprika
  • dash cumin
  • dash coriander
  • dash nutmeg
  • dash salt
  • dash pepper
  • 1/2 c. parmesan cheese

Instructions
 

Cook Pasta

  • Add about 4 inches of water to a large pot and bring to a boil over high heat.
  • Cook pasta according to the manufacturer's instructions. This typically entails boiling for about 8-12 minutes, or until barely al dente.
  • Remove the pasta from the water and set aside.
    You may want to stir it occasionally to keep the noodles from sticking together.

Sauté Produce

  • Add all of the rest of the ingredients, except for the cheese, to a skillet. Bring up to medium heat and sauté for 5 minutes.

Serve

  • Combine the pasta and produce together and top with cheese.
  • Serve immediately.
