Sweet Potato Fritters w/ Runny Egg

I've been testing my hand out on Fritters lately. They're reminiscent of a hash brown, but I made these with sweet potatoes, garlic, shallots, and green onions. I have a couple leftover and I've been mulling over what to do with them. I have a tendency of wrapping anything and everything that I have in the refrigerator in a tortilla and making burritos. I've done this with leftover patties before. Although I'm not quite in the mood for that today. My next go-to is nachos or omelettes. Although I'm hesitant to break apart something that took so much time to put together. So, I've gone the route of Fried Eggs w/ Fritters.

I also topped the fritters with Avocado Dip w/ Garlic, Tahini, & Lemon. This is essentially a cross between hummus and guacamole. Although you could add cheddar cheese, crumbled feta, or sour cream to the tops of the fritters. I probably would have added cheese had I had any that fit this flavor profile. Although it is a dairy-free dish without it!

Variations of Fried Eggs w/ Fritters

I can't resist a good runny egg. It's the icing on top of the breakfast cake. I fry an egg over everything from burgers and hashbrowns to toast and bruschetta. It's an easy way to elevate a dish without putting in too much effort. There are a multitude of ways to fry an egg. I like to use a cast iron skillet on a higher heat in order to keep the egg yolk from cooking. Although you could easily make a completely fried egg, instead of a runny one!

Fried Eggs & Fritters w/ Lemon & Tahini Avocado Dip

These Fried Eggs w/ Fritters consist of garlic, shallots, green onions, eggs, and all-purpose flour with a lemon and tahini avocado dip.

Equipment

  • Cheese Grater or Mandolin or Rotary Grater
  • Large Bowl w/ a Lid
  • Paper Towel
  • Large Skillet (preferably cast iron)

Ingredients
  

Avocado Dip

  • 2-3 avocados
  • 1 lemon juiced
  • 1 tbsp. tahini
  • 1 tbsp. olive oil
  • 1 clove garlic minced
  • 1/2 shallot minced
  • 1/2 tsp. cumin
  • dash salt
  • dash pepper

Fritters

  • 2 sweet potatoes peeled & grated
  • 1 tsp. salt
  • 2 cloves garlic minced
  • 1/2 shallot minced
  • 2 green onions chopped
  • 2 eggs whisked
  • 1/2 c. all-purpose flour
  • dash cumin
  • dash corainder
  • dash smoked paprika
  • dash pepper

Fried Egg

  • 1 egg one per fritter (8 total)
  • 1 fritters
  • dollop avocado dip
  • dash salt
  • dash pepper

Instructions
 

Avocado Dip

  • Add all of the ingredients to a bowl and mash with a fork.
    It can help to mash the avocado and tahini before adding the garlic and shallot, just so that the avocado is mashed well enough before adding the chunky ingredients. Although you could also put the entire thing in a food processor for a couple of minutes.
  • Chill in the refrigerator.

Salt Sweet Potatoes

  • Toss the grated sweet potatoes in a bowl and toss with 1 teaspoon of salt. Add a couple of layers of paper towel and cover with a lid and let sit for 30 minutes.
  • Wrap in paper towel and squeeze out the excess liquid.

Fritters

  • Heat a large skillet over medium heat with a hefty amount of heat-safe oil.
  • Meanwhile, toss the sweet potatoes in the rest of the ingredients.
  • Grab about 1/2 cup of the sweet potato mixture and form into a roughly 1/2-inch patty.
  • Place each of the patties 1/2-inch apart on the preheated skillet. Cook each side for about 3-5 minutes, or until crisp and browned on the edges. Make sure to flip gently in order to prevent breaking, much like a half-cooked pancake.
  • Set on a plate.

Fried Egg

  • With the same preheated skillet, crack egg into the pan.
    It should be hot enough that the egg sizzles, but doesn't deep fry or brown immediately.
  • Let cook until golden brown on the bottom and you can flip the egg with ease. The whites should be fairly set on both sides, but not completely cooked.
  • Flip and turn off the stove. Cook for another 30 seconds, or until the egg white is completely cooked.
  • Add fried egg to the fritter. Top with avocado dip and a dash of salt and pepper.

Tips, Tricks, & Notes

  • You can add cheese to the fritters, instead of flour. This will make it gluten free and a little bit of extra crunch. You can also use less oil to cook the fritter when the binding agent is cheese because it produces its own oils.
  • You can also melt cheese onto the fritter for more of a sandwich feel.
