Add all of the ingredients to a bowl and mash with a fork.It can help to mash the avocado and tahini before adding the garlic and shallot, just so that the avocado is mashed well enough before adding the chunky ingredients. Although you could also put the entire thing in a food processor for a couple of minutes.
Chill in the refrigerator.
Salt Sweet Potatoes
Toss the grated sweet potatoes in a bowl and toss with 1 teaspoon of salt. Add a couple of layers of paper towel and cover with a lid and let sit for 30 minutes.
Wrap in paper towel and squeeze out the excess liquid.
Fritters
Heat a large skillet over medium heat with a hefty amount of heat-safe oil.
Meanwhile, toss the sweet potatoes in the rest of the ingredients.
Grab about 1/2 cup of the sweet potato mixture and form into a roughly 1/2-inch patty.
Place each of the patties 1/2-inch apart on the preheated skillet. Cook each side for about 3-5 minutes, or until crisp and browned on the edges. Make sure to flip gently in order to prevent breaking, much like a half-cooked pancake.
Set on a plate.
Fried Egg
With the same preheated skillet, crack egg into the pan.It should be hot enough that the egg sizzles, but doesn't deep fry or brown immediately.
Let cook until golden brown on the bottom and you can flip the egg with ease. The whites should be fairly set on both sides, but not completely cooked.
Flip and turn off the stove. Cook for another 30 seconds, or until the egg white is completely cooked.
Add fried egg to the fritter. Top with avocado dip and a dash of salt and pepper.
Tips, Tricks, & Notes
You can add cheese to the fritters, instead of flour. This will make it gluten free and a little bit of extra crunch. You can also use less oil to cook the fritter when the binding agent is cheese because it produces its own oils.
You can also melt cheese onto the fritter for more of a sandwich feel.
