Baked Eggs w/ Mashed Potatoes & Yogurt

Every now and then I get in the mood for potatoes. Plus, I shop at Costco. So, getting a hankering for something that comes in bulk means that it's a dash to eat all of the potatoes before they start growing spuds! (Which you can plant to grow more potatoes). This means that I continuously have to come up with new and interesting ways to utilize potatoes. As much as I'll eat mashed potatoes for breakfast, lunch, and dinner? Sometimes I want to mix it up a little bit. Thus week I've started baking them with cheese to make Mashed Potatoes w/ Green Cauliflower & Cheddar. Today, I decided to toss an egg on these Eggs and Mashed Potatoes. I'll also make a lot of Potato Bakes, if you're into something more casserole-like. This is a great way to utilize leftover mashed potatoes after the holidays or whenever you're in the mood for breakfast mashed potatoes!

Variations of Baked Eggs & Mashed Potatoes

Mashed potatoes are one of my favorite things to make. They're quick and easy to toss together and a great way to utilize a big bushels of potatoes. You can bake them without the egg or mix in any number of ingredients. I like to add in Greek yogurt, chives, and even tried some pickles, which was delicious! Although sour cream, garlic, onion, jalapeños, rosemary, parsley, basil, cream cheese, curry powder, and any of your favorite additional seasonings.

Baked Eggs w/ Mashed Potatoes & Yogurt

These Baked Eggs & Mashed Potatoes consist of Yukon gold potatoes, Greek yogurt, green onions, and garlic w/ a couple of eggs cracked on top.

Equipment

  • Large Pot
  • Stovetop
  • Potato Masher

Ingredients
  

  • 2 lbs. Yukon gold potatoes
  • 1 c. Greek yogurt (or sour cream)
  • 2 green onions chopped
  • 2 cloves garlic
  • dash salt
  • dash pepper
  • 1 green
  • 2 eggs
  • 2 tbsp. cheddar cheese (optional)

Instructions
 

Mashed Potatoes

  • Peel and dice potatoes. They should be able an inch thick.
  • Place in a large pot and cover with 2 inches of water.
  • Bring to a boil over high heat.
  • Boil for 10-15 minutes, or until tender. You should be able to stick a fork in them and have it break in two pieces. They're not quite cooked if the fork comes out cleanly. And they're overdone if it breaks apart completely, instead of just in half.
  • Drain and place back in the pot.
  • Add the Greek yogurt, butter, salt, and pepper.
  • Mash with a potato masher until light and fluffy. Making sure to scrape the sides and stir occasionally.

Bake Mashed Potatoes

  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly grease a baking dish.
  • Add mashed potatoes and cover with eggs and cheese.
  • Bake for 15 minutes, or until the cheese begins to brown.
  • Serve immediately.
