I tend to think of salads as being boring. After all, aren’t they what you eat before a meal to feel better about the decadent meal that you’re about to have?

They’re typically a starter or side course when eating out that’s drenched in bulk ranch dressing. Or the thing that you eat to make you feel better about eating an enormous amount of gravy for Thanksgiving. Maybe one of those sides drenched in mayonnaise during a summer barbecue? That ones that are really just mayonnaise disguised as something edible!?

While ranch drenched calorie drain and I don’t even know if we can legitimately call ambrosia or potato salad an actual salad, I do in fact eat a lot of salads! I just don’t make what you would typically consider a side or appetizer dish.

Generally speaking, a salad is any cold dish that’s served with a dressing or dip.

Knowing me, this oftentimes means making something that’s large enough to be a meal in and of itself. It’s packed with enough protein to be filling and flavorful enough to be worth it.

Lentils w/ Cinnamon Roasted Squash & Habaneros

Fall is for gourds! While we do live in a day and age where you can get squash all year round, it is a fall harvest and I very much enjoy the seasonal harvest. And it truly isn’t the changing of the season without something […]

Brown Rice w/ Butternut Squash & Habaneros

August 30, 2020

This squash brown rice is absolutely the best rice that I have ever cooked! I am perpetually trying to make brown rice soft and tender. There is very little nutritional value in white rice. So, I try not to make it. Brown rice can be […]

Salad w/ Baked Salmon, Quinoa, & Tomatoes

August 20, 2020

This is one of those dishes that looks much more impressive than it is. Baked salmon salad with quinoa and cherry tomatoes is surprisingly simple to make. Quinoa takes about an hour to make and can utilize a wide assortment of fruits and vegetables that […]

Quinoa w/ Sweet Potatoes & Habaneros

August 20, 2020

Quinoa is one of my go-to staples! I cook quinoa in every flavor profile, with almost every dish. It’s a very versatile grain that originated in Peru and Bolivia. It has a mild, almost nutty taste that pairs well with other spices. In this sweet […]

Salad w/ Tofu Steak, Cherry Tomatoes, & Walnuts

I was looking for something to do with walnuts when I came across Muhammara. Muhammara is a roasted red pepper and toasted walnut dip. It’s traditionally made from Aleppo peppers in Aleppo, Syria. However, I have opted for more easily accessible habaneros! The end result […]

Scrambled Eggs w/ Sweet Potato Quinoa & Lettuce

August 9, 2020

When I think of salads, I tend to think smaller dinner salads drowning in ranch dressing. They’re the starter course that you have to work through before you get to the meal portion of the evening. But that’s not the kind of salad that I […]

Mayonnaise-Free Potato Salad w/ Quinoa

August 6, 2020

This week I made Sweet Potato Quinoa and Mayonnaise-free Potato Salad. I consider both of these salads. So, why not add them together…? I’m not sure what to call this concoction other than quinoa potato salad! This is perhaps the laziest meal that I have […]

Mayonnaise-Free Potato Salad w/ Garden Vegetables

August 6, 2020

Don’t get me wrong, like potato salads as much as the next person! I get those warm, fuzzy nostalgic feeling of backyard barbecues and good old fashioned mayonnaise drenched foods. I never actually had those experiences growing up. But if I did live in a […]

Salad w/ Tofu & Sweet Potato Quinoa

As much as I enjoy eggs, I am a big fan of tofu for breakfast. This vegan version of an egg scramble is one of my favorites! Although I hesitate to call it a vegan scramble. It’s more of a fried tofu salad with sweet […]

Top 5 Overrated Kitchen Gadgets NOT Worth Buying

Top 5 Overrated Kitchen Gadgets NOT Worth Buying

I hear what you're saying. The holidays are upon us. The overpriced culinary gadgets are finally on sale. But put down that copper pot. Step away from the Vitamix. And rethink that Instant Pot. Your counter space is too precious to spend that much money on things that you'll probably never use! Although, I do have some more useful recommendation, if you still think that you might want an all-purpose cooking contraption or fancy 19th century kitchen. Plus, nothing on this blog is sponsored. I just don't like it when people waste money on cooking fads. NAME ONE PERSON WHO ACTUALLY USES AN AT-HOME PRESSURE COOKER.
