Quiche w/ Greek Yogurt, Spinach, & Blue Cheese
I have been craving quiche for a little while. After Easter, I am still in the mood for eggs! And I've been buying waaaay too much bulk spinach. Which is not necessarily a negative, but it does mean that using spinach is not optional! It is my themed ingredient for the time being. So, with my need to use spinach and craving for eggs, I've been thinking that Greek yogurt quiche is the answer today!
Quiche are overall pretty easy to make. The basics are just eggs, dairy, and cheese. I almost always add some garlic and shallots. You can use pretty much any kind of dairy that you have on hand. Milk, cream, heavy whipping cream, coconut milk? It's all fine! And, while I do have coconut milk, I plan on adding a hefty amount of cheese into this. So, going the vegan route isn't exactly the flavor profile that I'm looking for!
What I do have is Greek yogurt. And I use Greek yogurt as a substitute for mayonnaise and sour cream all of the time. It's a little bit thicker than milk or cream, but the precise consistency doesn't make that much of a difference in quiche. And the slightly more acidic taste pairs incredibly well with quiche. I decided to add some Dijon mustard to play this up and it's absolutely delicious!
I spent quite a while trying to figure out what cheese to add. Anyone who knows me knows that I am a big fan of cheese. And parmesan is kind of a given. But, I have been craving blue cheese lately. I know that that's kind of a controversial opinion and you could absolutely substitute a sharp white cheddar. Spinach and blue cheese go incredibly well together, though. Blue cheese also has a very specific time and place in which it works. It's not something that I eat all of the time and people really need to stop just tossing them on salads where they don't belong! But blue cheese, when done right, is absolutely delicious and I stand by that! Blue cheese away!

Variations of Greek Yogurt Quiche
I am a huge fan of quiche. I almost never make a crust because... well, pie crust is a pain! It also doesn't add too much flavor to an egg dish. It's more of a bland, calorie-filled shell around an otherwise fairly healthy dish. Especially when substituting Greek yogurt, instead of heavy whipping cream. Regardless, I am a quiche aficionado. And will absolutely have to make Greek yogurt quiche a staple moving forward.
Quiche w/ Spinach & Blue Cheese
Equipment
- Food Processor (optional)
- Round Baking Dish (or Cast Iron Pan)
- Oven
Ingredients
- 6 eggs
- 1½ c. Greek yogurt
- 1½ tsp. Dijon mustard
- dash salt
- dash pepper
- 2 c. spinach
- 1 shallot
- 3 cloves garlic
- 1/2 c. parmesan divided 1/4 c. and 1/4 c.
- 1/2 c. blue cheese
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Whisk eggs, Greek yogurt, mustard, salt, and pepper together. Set aside.
- Add spinach, shallots, and garlic to a food processor. Pulse until roughly chopped.Alternatively, you can chop the spinach and mince the shallots and garlic by hand.
- Sprinkle half of the parmesan cheese on the bottom of the pan (1/4 cup).
- Pour just enough egg mixture to spread across the bottom (about 1/4 cup).
- Spread spinach mixture over it and top with blue cheese.
- Pour in the rest of the egg mixture.
- Top with the remaining parmesan cheese.
- Bake for 50-60 minutes, or until just set and lightly brown. You want the egg to still juggle slightly, but not be liquid.
- Serve immediately or chilled. Quiche is a great recipe to make ahead of time because it keeps well and is just as good cold. If you do reheat it, though, I would recommend heating in the oven. Oftentimes egg dishes don't microwave well as this tends to overcook them.
