Salsa w/ Roasted Tomatoes & Poblanos
Salsa is a great quick and easy recipe to toss together. I like to roast the tomatoes, peppers, garlic, and onions. Although you can easily make this a fresh salsa and skip the roasting process. I like to toss all of mine in an air fryer for 20 minutes. It takes a lot of the guess work out of it because air fryers are more precise than most barbecues. You can roast them any way you like, though, from the air fryer or barbecue to the oven or stovetop. Today, I made this roasted salsa with poblanos, tomatoes, and shallots. Although you can also mix and match your own favorite ingredients.
As much as I like salsa for chips and dip, topping nachos, burritos, and mixed into a salad bowl, I made this salsa today for Tamales w/ Tomatoes & Poblano Peppers. I was going for a bold flavor, without too much liquid. A thicker salsa is going to have less risk of spilling out of the tamal dough than a more liquid version. Although you can use any type of salsa to go along with them on the side or drizzled on top.

Variations of Poblanos Salsa
I made this salsa as the filling for tamales. Although it would easily work for all sorts of other dishes. I'm particularly fond of making my own salsa. Nothing beats the taste of making it from scratch! Especially for such a simple recipe. You can toss together salsa in no time at all. It takes about 20 minutes to roast the fruits and vegetables in the air fryer, enough time to cool down, and then a few quick pulses in the food processor. You can chop up the produce if you like, though.
